Ingredients
Dressing
- ¼ cup white wine vinegar
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp agave syrup
- Salt and pepper, to taste
Salad
- 1 cup savoy cabbage
- ½ English cucumber, seeded and chopped
- 1 red bell pepper, diced
- 1 Granny Smith apple, peeled and chopped
- 2 celery ribs, diced
- 1 carrot, peeled and shredded
- ¼ fennel bulb, chopped
- ½ cup slivered almonds
- ¼ cup crumbled goat cheese
Instructions
- In a small bowl, whisk together the vinegar, oil, mustard, agave, salt, and pepper. Set it aside.
- In a large bowl, toss together the cabbage, cucumber, red pepper, apple, celery, carrot, fennel, almonds, and the dressing.
- Serve immediately topped with the goat cheese.
