Ingredients
- 1 tbsp oil
- 1 lb lean ground beef
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 cup long grain white rice
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp red pepper flakes
- 2 cups beef broth
- 3 tbsp red wine vinegar
- ¼ cup fresh cilantro
- ¼ cup fresh parsley
- 1 lime, cut into wedges
- Salt and pepper, to taste
Instructions
- In a large skillet, heat the oil over medium-high heat. Add the beef to the pan and cook, breaking it up with the side of a spoon, until it is no longer pink, about 5 to 6 minutes. Season with salt and pepper to taste. Add the onion and red bell pepper. Cook until they begin to soften, about 2 to 3 minutes. Add the garlic and cook, stirring, until it is fragrant, about 30 seconds. Add the rice, smoked paprika, oregano, and red pepper flakes. Cook, stirring, until the spices become fragrant, about 30 seconds. Stir in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low, and cook, covered, until all of the broth has been absorbed, about 15 minutes.
- Stir in the red wine vinegar, cilantro, and parsley. Season with salt and pepper to taste.
- Serve immediately with some lime wedges or store in the refrigerator for up to 3 days.
