Cashew Crunch Salad

Ingredients
Dressing
- 3 tbsp sesame oil
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp agave syrup
- 1 garlic clove, grated
- ½ tsp fresh ginger
Salad
- 1 cup green cabbage
- 1 cup red cabbage
- 2 carrots, peeled and shredded
- 1 cup shelled edamame, cooked
- 1 cup crunchy chow mein noodles
- ¼ cup roasted cashews
- ¼ cup fresh cilantro
- 2 green onions, sliced
Instructions
- In a small bowl, whisk together the oil, vinegar, soy sauce, agave, garlic, and ginger. Set it aside.
- In a large bowl, toss the green cabbage, red cabbage, carrot, edamame, chow mein noodles, cashews, cilantro, green onion, and dressing.
- Serve immediately topped with more cilantro.
