Bruschetta Baked Shrimp

Ingredients
- 2 lbs peeled shrimp
- 1 cup cherry tomatoes
- 3 garlic cloves, minced
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil, divided
- ¼ cup breadcrumbs
- ¼ cup freshly grated Parmesan cheese
- 1 tbsp fresh parsley
- ¼ cup fresh basil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 425ºF.
- In a large baking dish, toss together the shrimp, tomatoes, garlic, balsamic vinegar, and 1 tablespoon olive oil. Season it with salt and pepper to taste.
- In a small bowl, combine the breadcrumbs, the remaining 1 tablespoon of oil, Parmesan cheese, and parsley. Sprinkle the breadcrumb mixture over the shrimp. Bake the shrimp until it is cooked through and the breadcrumbs begin to brown, about 10 to 12 minutes. If necessary, broil the shrimp until the breadcrumbs become golden, about 1 to 2 minutes.
- Serve immediately topped with the basil, or store in the refrigerator for up to 3 days.
