- 1 yellow onion, diced
- 1 garlic clove, minced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup 2% milk
- 4 cups broccoli florets
- 1 tsp dried mustard powder
- ½ tsp smoked paprika
- 1 cup shredded sharp cheddar cheese
- Salt and pepper
- In a large Dutch oven or soup pot, melt the butter over medium-high heat. Add the onion and cook, stirring often, until it begins to soften, about 2 to 3 minutes.
