Breakfast Tostadas
This fun, fresh breakfast idea is bursting with bold flavors like cheddar, jalapeno, and cilantro and then served on crispy tostoda shells with guacamole, sour cream, and pickled onions.

Ingredients
- 2 large eggs
- 2 tostada shells
- ½ cup refried beans
- ½ avocado, pitted and sliced
- ¼ cup prepared salsa
- 2 tbsp crumbled Cotija cheese
- 1 tbsp fresh cilantro
Instructions
- In a nonstick skillet over medium-high heat, fry the eggs sunny side up.
Spread a layer of the refried beans over the tostadas. Top each tostada with some avocado slices and the fried eggs.
Serve immediately topped with the salsa, Cotija cheese, and cilantro.
