Blueberry Lemon Energy Bites

- 1 cup dates, pitted and soaked in warm water for 15 minutes
- 1 cup old-fashioned rolled oats (gluten-free)
- ½ cup unsweetened shredded coconut
- ½ cup dried blueberries
- 1 lemon, zest
- Place all of the ingredients into a food processor and pulse until smooth. Roll the dough out into 1 inch balls.
- Serve immediately or store in the refrigerator for up to a week. Freeze the bites for up to 3 months.
