Blueberry Banana Breakfast Muffins

Ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 2 large eggs
- ¼ cup butter, melted
- 1 cup plain yogurt
- 2 ripe bananas, mashed
- 1 ½ cups blueberries
- 1 tsp chai spice blend
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 375ºF. Line a 12-cup muffin tin. Set it aside.
- In a large mixing bowl add the dry ingredients and whisk until well they are combined. Set it aside.
- In a medium bowl, whisk together the eggs, melted butter, yogurt, mashed bananas, and vanilla extract. Combine the wet ingredients with dry ingredients and mix until just combined. Fold in the blueberries. Scoop the batter into the muffin tin. Bake until an inserted toothpick comes out clean, about 25 to 30 minutes.
- Serve immediately or store in an airtight container for up to 3 days.
