Black Bean Burger

Ingredients
Burgers
- 2 15-oz can black beans, drained and rinsed
- ½ cup breadcrumbs
- ½ red onion, finely diced
- 1 garlic clove, minced
- 2 chipotle pepper in adobo sauce
- ½ tsp ground cumin
- ¼ cup fresh cilantro
- Salt and pepper, to taste
Toppings
- 4 hamburger buns
- 1 cup romaine lettuce
- 1 tomato, sliced
- ¼ cup guacamole
Instructions
- In a food processor, add all of the ingredients and pulse until a “dough” forms. Divide the mixture into 4 and shape into burger patties. Place them on a parchment-lined baking sheet and allow to chill in the refrigerator for at least 30 minutes.
- On a well-greased pan or grill, cook the patties over medium-high heat until they are golden on both sides and they are heated through, 4 to 5 minutes per side.
- Assemble the burgers on the buns with the toppings.
- Serve immediately.
