Ingredients
- 6 boneless skinless chicken thighs
- 3 white potatoes, cut into wedges
- 1 cup cherry tomatoes
- ½ red onion, chopped
- 2 tbsp oil
- 2 tbsp red wine vinegar
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Arrange the chicken, potatoes, tomatoes, and onion in a single layer in a large baking dish. Season with the oil, vinegar, garlic powder, oregano, salt, and pepper.
- Bake until the potatoes are tender and golden and the chicken has reached an internal temperature of 165°F, between 35 and 40 minutes.
- Serve immediately or store in the refrigerator for up to 3 days.
