Asparagus Mini Frittatas

Ingredients
- 6 large eggs
- 2 tbsp 2% milk
- 1 cup asparagus
- ½ cup shredded Swiss cheese
- 1 tbsp fresh chives
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375ºF. Grease a 6-cup muffin tin. Set it aside.
- In a large bowl, or measuring cup, whisk together the eggs and milk. Season with salt and pepper to taste. Set it aside. Divide the asparagus, Swiss cheese, and chives evenly between the muffin cups. Fill each muffin cup with the egg mixture. Bake until the eggs have set and the tops are lightly golden, about 15 to 20 min.
- Serve immediately or store in the refrigerator for up to 3 days.
