Asian Inspired Slaw

Ingredients
Dressing
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 lime, juice
- 1 tbsp agave syrup
- 1 tbsp soy sauce
- 1 tbsp fresh ginger
- 1 garlic clove, grated
Slaw
- 4 cups red cabbage
- 2 carrots, peeled and julienned
- ½ English cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1 mango, sliced
- 2 green onions, sliced
- ¼ cup cashews, chopped
Instructions
- In a medium bowl, whisk together the dressing ingredients and set it aside.
- To assemble the salad, arrange the cabbage in a large serving bowl and top with the remaining ingredients. Pour the dressing over the salad and toss well.
- Serve immediately or store in the refrigerator for up to 3 days.
