Slow Cooker Minestrone
Ingredients
- 1 yellow onion, finely diced
- 2 celery ribs, finely diced
- 2 large carrot, diced
- 1 small zucchini, diced
- ½ lb green beans, trimmed and chopped
- 3 garlic cloves, minced
- 1 cup quinoa
- 1 15-oz can cannellini beans, drained and rinsed
- 1 28-oz can tomato
- 6 cups vegetable broth
- 1 tbsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Combine all of the ingredients in a slow cooker. Cook on high for 3 hours or low for 6 to 8 hours.
- Enjoy immediately or store in the refrigerator for up to 5 days.
