Simple Pasta Bolognese
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, finely diced
- 1 carrot, peeled and finely diced
- 1 celery stalk, finely diced
- 2 garlic cloves, minced
- 1 lb lean ground beef
- 1 tbsp tomato paste
- 1 19-oz can tomato
- 1 cup beef broth
- ½ cup whole milk
- 2 tbsp fresh parsley
- 2 tbsp fresh basil
- Salt and pepper, to taste
- 1 lb pasta of your choice, cooked according to package directions
Instructions
- In a large sauce pot, heat the oil over medium-high heat. Add the ground beef. Crumble it with a spoon and cook, stirring often, until it is no longer pink. Remove beef from pot with a slotted spoon and set aside.
- Add the onion, celery and carrot. Cook until they become soft, about 5 minutes. Add garlic and cook for an additional 30 seconds. Return the beef to pot. Add the tomato paste and stir well. Add the diced tomatoes, beef broth and milk. Bring the mixture to a boil. Reduce the heat to medium-low and simmer the sauce for 30 minutes to 1 hour, stirring occasionally. Stir in the parsley, basil, salt and pepper. Simmer for another 5 to 10 minutes.
- Serve immediately over cooked pasta with freshly grated Parmesan or store in the refrigerator for up to 3 days.
