Ingredients
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- ½ lime, juice
- 2 tbsp brown sugar
- 1 tbsp oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp fresh ginger
- 1 cup cooked peeled shrimp
- 4 cups cooked rice
- 2 green onions, sliced
- ¼ cup fresh cilantro
Instructions
- In a small bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, and sriracha. Set it aisde.
- In a large skillet, heat the oil over medium-high heat. Add the onion and red bell pepper. Cook, stirring occasionally, until they begin to soften, about 2 to 3 minutes. Add the garlic and ginger and cook, stirring, until they become fragrant, about 30 seconds. Add the shrimp and cook until they are heated through, about 1 to 2 minutes. Stir in the rice and the soy sauce mixture and continue to cook until the rice is heated through.
- Serve immediately topped with the green onions and cilantro. Store in the refrigerator for up to 3 days.
