Ingredients
- ¼ cup avocado oil
- 2 limes, divided
- 1 tbsp chili powder
- 1 tsp garlic powder
- ½ cup sour cream
- ½ avocado
- ¼ cup fresh cilantro
- 2 tbsp oil
- 12 small flour tortillas
- 1 cup red cabbage
- ½ cup green cabbage
- salt, to taste
Instructions
- Preheat the oven to 375°F. Line a baking sheet with parchment paper. Set it aside.
- In a large bowl, whisk together the avocado oil, the juice of 1 lime, chili powder, and garlic powder. Season with salt to taste. Coat the cod fillets with the marinade. For a stronger flavour, allow them to marinate in the refrigerator for 15 to 30 minutes.
- Once ready to bake, arrange the fillets on the baking sheet. Bake until the fillets are cooked and flake easily with a fork, about 18 to 20 minutes. Broil until the cod is golden, about 1 to 2 minutes.
- While the fish is baking, in a food processor or blender, add the sour cream, avocado, the remaining lime juice, and cilantro. Season with salt to taste. Blend until the mixture is smooth. To thin out the sauce, while the food processor is running, slowly drizzle in the oil.
- Fill each tortilla with some of the fish. Top each taco with some red and green cabbage. Drizzle the sauce over the top.
- Serve immediately or store, unassembled, in the refrigerator for up to 3 days.
