Creamy Orzo with Asparagus & Goat Cheese

Ingredients
- 3 tbsp butter
- 1 shallot, minced
- 2 garlic cloves, minced
- 1 ½ cups dried orzo
- ¼ cup white wine
- 3 cups chicken broth
- 1 lb asparagus, trimmed and cut into thirds
- 2 tbsp goat cheese
- 2 tbsp fresh parsley
- Salt and pepper, to taste
Instructions
- In a large skillet, melt the butter over medium-high heat. Add the shallot and garlic and cook, stirring, until they begin to soften, about 1 to 2 minutes. Add the orzo and white wine and continue to cook, stirring, until the white wine has evaporated, about 1 to 2 minutes. Stir in the broth and bring the mixture to a simmer. Reduce the heat to medium and cook, stirring occasionally, until almost all of the liquid has been absorbed, about 7 to 8 minutes. Stir in the asparagus and cook, stirring constantly, until the asparagus is bright green and tender, about 2 to 3 minutes. Stir in the goat cheese until it is completely melted. Season with salt and pepper to taste. Stir in the parsley.
- Serve immediately or store in the refrigerator for up to 3 days.
