Chocolate Banana Pops
Ingredients
- 5 bananas
- 1 cup chocolate chips
- 1 tsp coconut oil
- 1 cup chopped peanuts
Instructions
- Cut the bananas in half and insert a popsicle stick into the base of each banana. Arrange them on a parchment-lined baking sheet and freeze them until they are solid, about 4 hours.
- Once frozen, in a double boiler over low heat, melt the chocolate with the coconut oil, stirring occasionally. Dip each banana in the chocolate and roll them in the peanuts. Return the dipped bananas onto the parchment-lined baking sheet and freeze them until the chocolate has hardened, about 10 minutes.
- Serve immediately or store in the freezer for up to 1 month.
