Cheesy Broccoli Quinoa
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 broccoli crown, cut into small pieces
- 1 cup cheddar cheese, shredded
- ½ tsp paprika
- Salt and pepper, to taste
Instructions
- In a large pot, bring the quinoa and broth to a boil over medium-high heat. Reduce the heat to a simmer, and cook, covered, for 10 minutes. Stir in the broccoli and cook for another 5 minutes. Stir in the salt, pepper, paprika, and cheese. Cook until the cheese has completely melted.
- Serve immediately or stoer in the refrigerator for up to 5 days.
