Ingredients
Dressing
- 3 tbsp olive oil
 - 2 tbsp white wine vinegar
 - ½ shallot, minced
 - 1 tsp Dijon mustard
 - 1 tsp honey
 - 1 tsp fresh thyme leaves
 - Salt and pepper, to taste
 
Salad
- 6 cups mixed greens
 - 2 navel orange, peeled and sliced
 - 2 beet, peeled and julienned
 - ¼ cup pumpkin seeds
 - ¼ cup crumbled goat cheese
 
Instructions
- In a small bowl, whisk together all of the dressing ingredients. Season with salt and pepper to taste. Set it aside.
 - In a large bowl, toss together the greens, oranges, beets, and dressing.
 - Serve immediately topped with the pumpkin seeds and goat cheese.
