3 Spring Pasta Recipes!

Asparagus & Spring Pea Penne

1lb penne, dried
½ cup pancetta, diced
1 onion, finely diced
3 garlic cloves, minced
1 asparagus bunch, cut into 2” pieces
2 cups snap peas, sliced sliced into thirds
1 ½ cups ricotta cheese
¼ cup parsley, chopped
3 tbsp chives, chopped
Salt and pepper to taste
Lemon wedges for garnish

Cook pasta according to package instructions. Drain and set aside. In dutch oven over medium-high heat, add pancetta. Cook for 1-2 minutes and add onions and cook for another 2-3 minutes, or until softened. Add garlic and cook until fragrant. Add peas and cook for another 1-2 minutes, or until bright green. Add cooked pasta to dutch oven and mix well. Stir in ricotta and herbs. Season with salt and pepper to taste.

Deconstructed Pesto Fusilli

1lb fusilli, dried
¼ cup olive oil
4 garlic cloves, minced
4 cups spinach, chopped
1-2 cup basil, chopped
1 cup cherry tomatoes, halved
1 cup parmesan, grated
½ cup pine nuts

Cook pasta according to directions on the box. Drain excess water and set aside. In a dutch oven over medium-high heat, add oil. Add garlic and cook until it becomes fragrant. Reduce heat to medium-low and add pasta. Add spinach, basil, tomatoes and half of the parmesan. Mix well and season with salt and pepper to taste. To serve pasta, garnish with remaining parmesan and top with pine nuts.

Sausage, Oyster Mushroom & Broccolini Fettuccine

1lb fettuccine, dried
½ lb Italian sausage, casings removed
½ tsp chili flakes
2 cups oyster mushrooms, chopped
1 tbsp thyme leaves
2 garlic cloves, minced
1 bunch broccolini
Salt and pepper to taste

In a dutch oven over medium-high heat, cook for 3-4 minutes. Add chili flakes and oyster mushrooms and continue to cook until golden and cooked through. Add thyme and garlic and cook for another minute. Meanwhile, cook pasta according to package instructions. Add broccolini to pasta pot 1-2 minutes before pasta is cooked through. Drain excess water and toss pasta with sausage and mushroom mixture. Season with salt and pepper to taste.

Shrimp Farfalle

Prep Time: 5 minutes

Cook Time: 10 minutes

Shrimp Farfalle

Ingredients

  • 1 box farfalle pasta
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 shallot, finely diced
  • 2 cloves of minced garlic
  • 1 bag of peeled uncooked shrimp
  • 1/3 cup white wine
  • salt and pepper
  • chili flakes to taste
  • 1 cup cherry tomatoes, halved
  • 2 cups baby kale or spinach.
  • fresh parmesan for grating on top

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large frying or saucepan, heat your butter and olive oil over medium high (The olive oil prevents the butter from burning.)
  3. Add shallots and garlic and sautee for two minutes.
  4. Add peeled shrimp.
  5. Season with salt, pepper and chili flakes to taste.
  6. Add white wine and bring to a simmer.
  7. Add tomatoes and kale.
  8. Cover and cook until kale wilts and tomatoes are heated through; about 3-5 minutes.
  9. Pour over cooked pasta and stir to combine.
  10. Grate fresh parmesan over top.
  11. Enjoy!!!

Greek Chicken Penne

Greek Chicken Penne

Ingredients

  • 1 box of penne
  • 2 tbsp olive oil
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 chicken breasts, sliced
  • 1 tsp Greek seasoning
  • 1 can diced tomatoes
  • 1 zucchini, chopped
  • 1 cup marinated artichoke hearts
  • 1/3 cup kalamata olives, chopped
  • lemon zest
  • ½ cup feta cheese, crumbled

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large frying or saucepan, heat your olive oil.
  3. Add red onions and sauté for two minutes.
  4. Add garlic and sauté for another minute.
  5. Add chicken and season with Greek seasoning, salt and pepper.
  6. Cook until the chicken is cooked through and no longer pink.
  7. Add crushed tomatoes, zucchini, artichoke hearts and olives.
  8. Simmer for ten minutes on medium low heat.
  9. Pour sauce over cooked pasta.
  10. Mix in lemon zest and feta cheese.
  11. Stir to combine.
  12. Enjoy!

Lazy Lasagna Bake

Ingredients

  • 1 box rotini
  • 1 tbsp olive oil
  • 1 small red onion, finely diced
  • 2 cloves garlic, minced
  • 3 Italian sausages, removed from casings OR ground beef or ground poultry
  • 1 can crushed tomatoes
  • 1 tsp Italian seasoning
  • salt and pepper
  • 1 package baby spinach, pre-washed
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large frying or saucepan, heat your olive oil.
  3. Add red onions and sauté for two minutes.
  4. Add garlic and sauté for another minute.
  5. Add sausage and break into pieces.
  6. Cook until the sausage is cooked through and no longer pink.
  7. Add crushed tomatoes, Italian seasoning and salt and pepper.
  8. Simmer for ten minutes on medium low heat.
  9. Add baby spinach and cover for two minutes.
  10. Pour sauce over cooked pasta.
  11. In a large baking dish, spread one layer of pasta and top with shredded mozzarella.
  12. Continue creating layers of pasta and mozzarella.
  13. Top with mozzarella and some grated parmesan and bake for approximately 20 minutes at 350º.
  14. Broil for the last minute or two to get a nice crispy top.

Italian Seasoning

Italian Seasoning

This classic Italian seasoning is delicious on beef, pork, poultry, in pasta or even mixed with extra virgin olive oil and served with bread.

Ingredients

  • 1 tbsp dried basil
  • 1 tbsp dried marjoram
  • 1 tbsp dried oregano
  • 1 tbsp dried rosemary
  • 1 tbsp dried sage
  • 1 tbsp dried thyme
  • 1 tbsp dried flat leaf Italian parsley

Instructions

  1. Mix ingredients in a mason jar.
  2. Store for up to six months.
  3. Enjoy!
