3 Easy Guacamole Recipes!

Salsa Guacamole
2 avocados, diced
1 cup tomatoes, finely diced
¼ cup white onion, finely diced
½-1 garlic clove, grated
¼ cup cilantro, chopped
1 lime, zest and juice
Salt and pepper to taste

In a large bowl, using a fork or potato masher, mash all ingredients together and season with salt and pepper to taste.
Enjoy!

Greek Guacamole
3 ripe avocados, diced
3 tbsp sun dried tomatoes, minced
3 tbsp olives, pitted and roughly chopped
½-1 garlic clove, grated
1 tbsp parsley, chopped
1 tbsp dill, chopped
1 tsp greek seasoning
½ lemon, juiced
2 tbsp feta, crumbled for garnish

In a large bowl, using a fork or potato masher, mash all ingredients together and season with salt and pepper to taste. Top with crumbled feta.
Enjoy!

Bacon & Goat Cheese Guacamole
3 ripe avocados, diced
6 bacon slices, cooked and chopped
½ cup goat cheese, crumbled
1 garlic clove, grated
2 green onion, sliced
½ lemon, juice
Salt and pepper to taste

In a large bowl, using a fork or potato masher, mash all ingredients together and season with salt and pepper to taste. Top with extra crumbled goat cheese and bacon bits and enjoy!

  • 1 red chili, seeded and minced
  • 1 tsp ginger, freshly grated
  • 1 clove of garlic, minced
  • 1 tbs sweet Thai chili sauce

  2. Mix in lime juice, green onion, red chili, ginger, garlic and thai chili sauce.

Grilled Corn & Chipotle Guacamole

This delicious dip is made even better with the sweet crunch of grilled corn and the smoky heat of a chipotle pepper! Mmm!

Ingredients

  • 3 ripe avocados
  • ½ cup grilled corn kernels
  • 1 lime, juiced
  • ¼ red onion, finely diced
  • ½ jalapeno pepper, minced
  • 1 tomato, seeded and diced
  • 1 clove of garlic, minced
  • 1 bunch of fresh cilantro, chopped
  • ½ tsp chili powder
  • ½ tsp cumin
  • cayenne pepper to taste
  • salt and pepper to taste

Instructions

    To grill the corn:
  1. Soak cob in water for 15 minutes.
  2. Remove cobs from water.
  3. Place cobs on the grill for about 10 minutes, turning frequently until you’ve got grill marks on all sides.
  4. Carefully cut the corn off the cob.
  5. To make the dip:
  6. Using a potato masher, mash the avocados.
  7. Mix in lime juice, corn, red onion, jalapeno, tomato, garlic, chipotle pepper, cilantro, cumin, chili powder, salt and pepper.
  8. Serve immediately or store in the refrigerator for up to three days.
  9. Enjoy!
