How to make popcorn WITHOUT a microwave!

I am a HUGE popcorn fan but not such a big fan of the microwave.  In fact, I haven’t owned a microwave for more than a decade so I spent years without popcorn until a my boyfriend showed me how to make it on the stove.  This is SOOO EASY you’ll wonder why you haven’t been making it this way all along.

Prep Time: 1 minute

Cook Time: 2 minutes

Total Time: 3 minutes

Yield: 6-8 cups

Ingredients

  • 1/2 cup popcorn kernels
  • 2 to 3 tbsp canola or vegetable oil

Instructions

  1. Coat the bottom of large pot with canola or vegetable oil. It is really important to coat the entire surface, otherwise your popcorn will burn. You also want to use an oil with a high smoke point so don't try this with olive oil.
  2. Once your pot is coated, turn your heat to medium high and place two corn kernels in the pot.
  3. Watch those kernels - as soon as they pop, your pot is ready.
  4. Pour a half cup of corn kernels into the pot in a single layer and replace the lid.
  5. Listen closely - as soon as you hear the first few pops give your pot a good shake.
  6. Alternate ten seconds on the heat with ten seconds of shaking. This will ensure your popcorn pops evenly and doesn't burn. This will take about two minutes of constant attention so make any other plans 🙂
  7. As soon as your hear the popping slow, turn off the heat and shake your pot until the last kernels have popped.
  8. And VOILA! You have light, airy popcorn without the microwave. Enjoy!

Cinnamon Roll Popcorn

Cook Time: 8 minutes

Total Time: 16 minutes

Yield: 7-9 cups

Cinnamon Roll Popcorn

Ingredients

  • 6-8 cups popcorn
  • 1 cup pecans, chopped
  • ¼ cup salted butter
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup white chocolate

Instructions

  1. Add pecans to popcorn and mix. Set aside.
  2. In a small saucepan, melt butter. Add brown sugar, cinnamon and vanilla. Heat until slightly thickened.
  3. Pour mixture over popcorn, replace lid and shake until popcorn is coated.
  4. Spread popcorn onto a parchment-lined baking sheet.
  5. Use a double boiler to melt white chocolate chips.
  6. Drizzle white chocolate over popcorn. Allow to cool completely
  7. Enjoy!!

How to make CREPES

Crepes

Prep Time: 1 hour, 5 minutes

Cook Time: 10 minutes

Total Time: 1 hour, 15 minutes

Yield: 10-12 large crepes

These incredible crepes are effortless to make, super versatile and absolutely delicious!!!

Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 3 tbs butter, melted
  • 1 cup flour
  • 2 tbsp butter, for cooking

Instructions

  1. Mix all of the ingredients in your blender.
  2. Using a sieve, strain your batter.
  3. Let your batter rest for at least an hour or overnight in your refrigerator.
  4. Melt some butter in a non-stick frying pan over medium-high heat.
  5. Pour your batter into the centre of the pan and turn the pan until the batter is in a thin, even layer.
  6. Watch the edges - once they've crisped up and begin to pull away from the pan you're ready to flip your crepe.
  7. Using a rubber spatula, flip your crepe and cook for another ten seconds.
  8. Top them with whatever deliciousness you like.
  9. ENJOY!
