Frequently Used & Favorite Items

Gingerbread Pancakes
2 cups store bought boxed pancake mix
1 tbsp ground cinnamon
1 tbsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves
1 1/2 cups water
¼ cup molasses
2 tbsp butter

Glaze:
1 cup icing sugar
2-3 tbsp milk

In a large bowl, whisk together store bought dry pancake mix with spices. Add remaining ingredients indicated on the instructions of the box and molasses and mix well. To make pancakes, melt butter on a skillet over medium heat and pour a ¼ cup of mixture per pancake, fitting as many as you can onto the pan. Fry until golden brown on one side and top of pancake is bubbly. Flip the pancakes and cook until the other side is golden. To make glaze, whisk together icing sugar with milk. If your glaze is too thick, add a little more milk.

Eggnog French Toast
1 loaf crusty French bread, cut into slices
2 cups eggnog
6 eggs
¼ tsp nutmeg
1 tsp rum extract (optional)
2 tbsp butter

In a large bowl, whisk together eggnog, eggs, nutmeg and rum extract. Melt butter in a large skillet over medium heat. Dip each slice of bread into eggnog mixture and fry until it is golden brown on both sides.

Cinnamon Roll Strata
Strata:
2 rolls store bought cinnamon roll dough, diced into 1-inch pieces
2 small apples, peeled, cored and diced
⅓ cup chopped pecans
2 eggs
½ cup milk
1 tsp vanilla extract

Glaze:
Icings from store bought cinnamon roll dough
3 tbsp maple syrup

In a large bowl, toss together diced cinnamon roll dough, apples and pecans. Set aside. In another bowl, whisk together eggs, milk and vanilla extract. Pour egg mixture over the cinnamon roll mixture and mix well. Transfer to a well greased bundt pan. Bake, covered with aluminum foil at 350ºF for 30 minutes. Remove foil and continue to bake until golden brown and dough is cooked through, approximately 15-25 minutes. While strata is cooling, whisk together glaze ingredients. Once strata is completely cool, remove from bundt pan and drizzle with glaze.

2 tbsp almond butter
1 apple, diced
⅛ cup dried cranberries
¼ cup granola

Nutella, Banana, Granola
1 whole wheat tortilla
1 tbsp nutella
1 tbsp mascarpone
1 banana, sliced
¼ cup granola

EASY Blueberry Lemon Muffins | Tastes of Summer

Lemon Blueberry Muffins
1 ½ cups flour
¾ cup sugar
1 tsp baking soda
1 tsp baking powder
Pinch of salt
1 plain yogurt
1 ½ cup buttermilk
1 egg
¼ cup vegetable oil
1 lemon, zest and juice
1 cup blueberries

In a large bowl, whisk together flour, sugar, baking soda, baking powder and salt. In another bowl, whisk together yogurt, buttermilk, egg, oil and lemon zest & juice. Fold in dry ingredients into the wet mixture and stir in blueberries. Divide mixture up into a lined muffin tin. Bake at 375ºF for 20-25 minutes or until a toothpick can be inserted and comes out clean.

Strawberry Lemonade Smoothie

½ cup peach nectar or juice
1 peach, fresh or frozen and diced
1 banana

Cherry Bomb Smoothie

½ cup pineapple juice
½ cup cherries, fresh or frozen and pitted
½ cup pineapple, fresh or frozen and diced
1 banana

Key Lime Smoothie

½ cup almond milk
½ cup vanilla yogurt
1-2 tbsp cream cheese
1 banana
1 lime, zest and juice
2 graham crackers

Cranberry Blueberry Smoothie

½ cup cranberry juice
½ cup vanilla yogurt
½ cup blueberries, fresh or frozen
1 banana

5 Egg-celent Omelette Recipes!

Cooking Instructions:
In a small bowl, whisk eggs. Heat up a nonstick pan over medium-low heat and add butter. Once butter is melted, pour in eggs and stir constantly with a rubber spatula. Once eggs begin to solidify, swirl the pan to fill in any gaps. Run the spatula along the edge of the pan to make sure i doesn’t stick. When eggs have set in an even layer, add toppings of choice. Carefully, by tipping the pan slightly, fold the omelette over on itself.

Spring Herb & Parmesan Omelette

2 eggs
1 tsp chives, chopped
1 tsp parsley, chopped
1 tsp basil, chopped
2-3 tbsp parmesan cheese, freshly grated
Salt and pepper to taste

Asparagus & Roasted Red Pepper Omelette

2 eggs
3 asparagus spears, steamed
3 tbsp roasted red pepper, chopped
1 tbsp feta, crumbled
Salt and pepper to taste

Broccolini Cheddar Omelette

2 eggs
2 broccolini spears, blanched
3 tbsp cheddar cheese
Salt and pepper to taste

Mushroom & Goat Cheese Omelette

2 eggs
5 mushrooms, sautéed
2 tbsp goat cheese, crumbled

Avocado Egg Salad Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
1 boiled egg, chopped
½ avocado
¼ tsp chili powder
salt & pepper
½ tomato, thinly sliced

In a small bowl mash the egg and avocado with the back of a fork. Season with chili powder, salt and pepper. Spread mixture on toast and top with tomato slices.

Ants On A Log Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
1 tbsp peanut butter or almond butter
1 celery rib, thinly sliced
1 tbsp raisins

Spread peanut butter over toast. Top with sliced celery and raisins.

Mediterranean Morning Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
2 tbsp hummus
1 tbsp roasted red peppers, thinly sliced
2 tsp kalamata olives, thinly sliced
2 tsp feta cheese, crumbled
¼ tsp Greek seasoning

Spread hummus over toast. Top with roasted red peppers, olives, feta cheese and Greek seasoning.

Grape & Goat Cheese Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
1 tbsp goat cheese
6-8 grapes, halved
1 tbsp walnuts, chopped
1 tsp honey

Spread goat cheese over toast. Top with grapes and walnuts. Drizzle with honey.

Smoked Salmon Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
1 tbsp cream cheese
2 radishes, thinly sliced
3 pieces smoked salmon
fresh dill, chopped

Spread cream cheese over toast. Top with sliced radish, smoked salmon and chopped dill.
Strawberry Basil Toast
1 slice Dempster’s 100% Whole Grains 12 Grain Bread, toasted
1 tbsp goat cheese
3-4 strawberries, sliced
2 basil leaves, finely chopped
½ tsp balsamic vinegar

Spread goat cheese over toast. Top with strawberries, balsamic vinegar and shredded basil.
