1 whole wheat tortilla
2 tbsp tzatziki
½ cup chicken, cooked and shredded
¼ cup cucumber, diced
¼ cup cherry tomatoes, quartered
¼ cup green pepper, finely diced
2 tbsp feta, crumbled
½ tsp dried oregano

Sweet Chili Tofu Wraps
1 whole wheat tortilla
2-3 romaine leaves
½ cup tofu, diced and sautéed
½ avocado, sliced
½ red pepper, sliced
1 tbsp sweet chili sauce
1 tbsp green onion, sliced
Sesame seeds for garnish

Spinach & Artichoke Wrap
1 whole wheat tortilla
2 tbsp cream cheese
1 cup baby spinach
½ cup chicken, cooked and shredded
½ cup artichoke hearts, chopped
1 tbsp parmesan, grated

Samosa Wrap
1 whole wheat tortilla
2 tbsp mango chutney
½ cup baby spinach
¼ cup curried potatoes

Back-to-school Lunch: Chinese Fried Quinoa

Chinese Fried Quinoa

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Calories per serving: Delicious!

Chinese Fried Quinoa

Ingredients

  • 2-3 cups cooked quinoa
  • 1 tbsp sesame oil
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 2 carrots, peeled and diced
  • ½ cup frozen peas
  • 2 eggs (optional)
  • 1 tbsp soy sauce
  • 1 tsp sriracha (optional)
  • 2 green onions, chopped

Instructions

  1. In a large wok or fying pan, heat sesame oil over high heat.
  2. Add onion and garlic and cooking, stirring frequently, until translucent.
  3. Add carrots and peas and cook for 2 or 3 minutes until they begin to soften.
  4. Push veggies over to one side of the pan and on the other side of the pan, scramble two eggs.
  5. Combine the veggies and eggs and stir in cooked quinoa.
  6. Add soy sauce and sriracha.
  7. Finish with green onions.
  8. Enjoy!

Cook Time: 20 minutes

Tangy Thai Quinoa

Ingredients

    For the quinoa
  • 2-3 cups cooked quinoa
  • 1 red bell pepper, chopped
  • ¼ red cabbage, shredded
  • 2 carrots, shredded
  • ½ cup edamame, cooked
  • For the sauce
  • 1 tsp peanut butter
  • 1-2 tbsp soy sauce
  • 1 tsp honey
  • ½ lime, juiced
  • 1 clove garlic, minced
  • ½ tsp ginger, grated
  • chili flakes to taste

Instructions

  1. In a large mixing bowl, combine quinoa, cabbage, peppers, carrots and edamame. Set aside.
  2. In a small bowl, whisk together peanut butter, soy sauce, honey, lime, garlic, ginger and chili flakes.
  3. If the mixture is too thick, thin it out with more soy sauce or a drizzle of oil.
  4. Pour over quinoa and mix well.
  5. Enjoy!

Cheesy Broccoli Quinoa

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Calories per serving: Delicious!

Cheesy Broccoli Quinoa

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 crown broccoli, cut into small pieces
  • 1 cup white cheddar, shredded
  • ½ tsp paprika
  • salt and pepper

Instructions

  1. Combine vegetable broth and quinoa in a medium saucepan.
  2. Bring to a boil.
  3. Reduce heat to low, cover and simmer for ten minutes.
  4. After ten minutes, add broccoli florets, cover and continue to simmer for an additional five minutes.
  5. Stir in salt, pepper, paprika and shredded cheese.
  6. Cover and let sit for five minutes.
  7. Enjoy!

Mini Stuffed Peppers

Ingredients

  • 4 mini bell peppers
  • 8 turkey slices
  • ½ cup herbed goat cheese OR hummus

Instructions

  1. Cut bell peppers in half lengthwise. Remove seeds.
  2. Fold one slice of turkey in quarters and stuff pepper.
  3. Top with goat cheese or hummus.
  4. Finish with a sprinkle of Greek seasoning.
  5. Enjoy!
  6. **Try with ham and cheese, roast beef and blue cheese or tuna salad.

FroYo Berry Bites

Ingredients

  • 1 cup berries (strawberries, blueberries, raspberries)
  • 1 cup vanilla yogurt

Instructions

  1. Using bamboo skewers, dip berries into yogurt.
  2. Place dipped berries on a parchment lined baking sheet.
  3. Freeze for at least two hours.
  4. Remove berries from tray and place in a freezer bag.
  5. Store in the freezer for up to six months.
  6. Enjoy!
