Cheesy Broccoli Quinoa
- 1 cup quinoa
- 2 cups vegetable broth
- 1 crown broccoli, cut into small pieces
- 1 cup white cheddar, shredded
- ½ tsp paprika
- salt and pepper
- Combine vegetable broth and quinoa in a medium saucepan.
- Bring to a boil.
- Reduce heat to low, cover and simmer for ten minutes.
- After ten minutes, add broccoli florets, cover and continue to simmer for an additional five minutes.
- Stir in salt, pepper, paprika and shredded cheese.
- Cover and let sit for five minutes.
