Cheesy Broccoli Quinoa

Cheesy Broccoli Quinoa


  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 crown broccoli, cut into small pieces
  • 1 cup white cheddar, shredded
  • ½ tsp paprika
  • salt and pepper


  1. Combine vegetable broth and quinoa in a medium saucepan.
  2. Bring to a boil.
  3. Reduce heat to low, cover and simmer for ten minutes.
  4. After ten minutes, add broccoli florets, cover and continue to simmer for an additional five minutes.
  5. Stir in salt, pepper, paprika and shredded cheese.
  6. Cover and let sit for five minutes.
  7. Enjoy!
